  • 1 red or green bell pepper, diced
  • 2 cups of diced tomatoes or 1 28 ounce can of diced tomatoes
  • 1 tablespoon of adobo sauce (which comes from canned chipotle peppers)
  • ¼ cup of fresh cilantro, minced
  • 1 tablespoon of fresh tarragon, chopped
  • ¼ cup of minced white or green onion (or some of each)
  • 2 tablespoons of balsamic vinegar
  • ½ teaspoon of salt or to taste
  1. Toss together the bell pepper, tomatoes, adobo sauce, cilantro, tarragon, onion, and balsamic vinegar in a bowl.
  2. Add salt to taste and mix well.
  3. Refrigerate in a covered dish for a least an hour.
  4. Serve with warm tortilla chips.

This is such an easy condiment to make. It is based on tomatoes and we are also using bell pepper, onion, fresh herbs and a little balsamic vinegar, along with some adobo sauce. In line with most Mexican condiments, this one is based on fresh ingredients. Although you can, at a pinch, swap the fresh tomatoes for canned ones, we recommend using fresh tomatoes for a more authentic result. Serve this as a dip for corn chips or tortilla chips, or enjoy it alongside a grilled steak, perhaps with steamed vegetables on the side too, and a baked potato, to make a hearty meal.
