Well my whole longwinded reason for mentioning it is chipotle is probable my favorite chili (well maybe Birdseye) and so blending that taste with bacon and then nice crisp fries oh this is not one to eat before a doctor’s appointment but on a Saturday a few weeks out from one or on a game day make this with a pot of chili and the guys will never leave. Having the luxury of a house of guys to test my recipes on has its advantage if you want to know how to keep the men around this is a good start.
- 1 16 ounce bag crinkle cut fries
- 4 ounces Chipotle Cheddar by Cabot, shredded

In the picture below you will find a very traditional side dish from Canada known as Poutine. It is a combination of gravy, French fries and cheese curds. This is by no means the quid essential recipe on this national food but rather a quick and easy introduction for my mainly American audience.
I wanted to keep this recipe extra simple so you could find out what you have been missing rather than replace someone’s French Grandmother’s home cooked treasured recipe. I find that sometimes people are shied away from new dishes from other places because they see the recipe and a long list of ingredients and it scares them away from trying something new that is just so good tasting it may change your view on the culinary world.
So while I normally don’t call out for a lot of packaged items I thought the best way to get this on your table was to pick some readily available good representations of the traditional dish that would be as easy as possible to make and therefore would get you to try this amazing treat. I know to most Americans we can’t see fries with much more than ketchup but as this page is designed to introduce you to the many different facets of the “French Fry World” this was best kept down and so good tasting.
- 1 pound McCain or Ore-Ida straight cut French fries
- 2 cups Muenster Cheese Curds
- Club House Gravy Mix, Poutine
- Peanut oil for frying
- In your deep fryer preheat the peanut oil to 375 degrees F.
- Prepare the gravy mix in saucepan according to the package directions.
- While the gravy is simmering place the French fries one batch at a time in the deep fryer don’t crowd them and cook 5 to 6 minutes or until lightly golden brown in color.
- Using a frying strainer remove the fries to a plate with paper towels to absorb any excess oil.
- Place the fries while still hot in a bowl and distribute the cheese curds over them.
- Using a ladle pour the gravy onto the fries with an appeal amount and serve right away.
You may opt to use the fork as this can get a bit messy but it is finger licking good so to speak so you may chose not to. As Americans we like to think that the French fry is all our own but like another great tasting food in this contacted world great taste are bound to travel and pick up new and delicious taste on that journey. One such taste and travel dare I say maybe improvement or at least a delicious option to the beloved fry comes from just north of the border in this traditional Canadian treat know as Poutine a delightful mix of fries, cheese and hearty beef gravy.
