The new site is awesome and we want to thank everyone on the staff that has contributed to it for their excellent job. We are very proud of the site and it will soon be the biggest site in the system with daily recipes starting to show up on October first so check often for a new dessert recipe daily we think you’ll like the new format and design and even more the great new and old recipes.

How to Make Strawberry Rhubarb Cobbler
- Enough pastry crust dough to fit a 9 inch pie plate
- 1 teaspoon baking powder
- 2 tablespoons cold unsalted butter, chopped into small pieces
- ½ cup chilled heavy cream
- ¼ teaspoon salt
- 2 tablespoons white sugar plus 1 ½ teaspoons for sprinkling
- 1 tablespoon milk
- ½ teaspoon lemon zest
- 1 cup all-purpose flour
- Whipped cream or ice cream to serve (optional)
For the Filling:
- 2 tablespoons cornstarch
- 2 cups cleaned rhubarb, in ½ inch slices
- 2 cups rinsed, hulled strawberries, in ¼ inch slices
- 1 tablespoon lemon juice
- 1 ½ cups white sugar
- Roll the dough out to make a ¼ inch thick 12 inch wide circle, and fit it into a 9 inch pie dish.
- Fold the edges underneath and crimp them, then chill the pie crust for half an hour.
- Stir together the flour, salt, baking powder, lemon zest, and 2 tablespoons of the sugar.
- Cut in the butter using a pastry blender, until the mixture looks like breadcrumbs.
- Stir in the cream, bit by bit, until the dough starts to hold together.
- You might need to add a bit more cream if the dough is too dry.
- Turn the dough on to a lightly floured board and pat it together to make a ½ inch thick round.
- Cut the dough into 8 circles, using a biscuit cutter.
- Put the biscuits on a cookie sheet and lightly cover the cookie sheet with plastic wrap.
- Refrigerate the biscuits until you are ready to use them.
- Place an oven rack in the bottom ⅓ of the oven and preheat it to 350 degrees F.
- Line a cookie sheet with parchment paper.
- Combine the rhubarb, strawberries, lemon juice, cornstarch, and sugar, and mix gently.
- Pour this mixture into the unbaked pie crust.
- Arrange the cobbler biscuits on top of the rhubarb mixture.
- Brush with milk or cream and sprinkle 1 ½ teaspoons of white sugar over the top.
- Put the pie dish on the lined cookie sheet and bake for 1 hour and 15 minutes or until the juices are thick and bubbling.
- Lift one of the biscuits to check the underside. If the cobbler is done, the biscuit should look like a dumpling not like raw dough.
- Cool the cobbler to room temperature on a wire rack and serve, garnished with whipped cream or ice cream if you like.
