Recipe: How Do I Prepare a New York Strip Steak?
If you are lucky enough to have a succulent New York strip steak to cook, the following recipe is guaranteed to make your mouth water. So, why do they call it a New York strip steak anyway? Strip steak is also known as Kansas strip steak, Delmonico, shell steak and strip loin. In the UK it is called Porterhouse steak. This steak comes from the strip loin part of a sirloin steak and its muscle does not do much work, leaving the steak naturally tender. A Kansas strip steak usually has some bone on it but a New York strip steak is boneless and has the name to indicate this. The following recipe combines this tender cut with a delicious homemade garlic butter.
Grilled New York Strip Steak with Roasted Garlic Butter
- 4 New York strip steaks, ¾ lb each, and 1 inch thick
- 1 ½ teaspoons salt
- 1 tablespoon whole black peppercorns, coarsely ground
- Extra virgin olive oil
- For the Roasted Garlic Butter:
- 1 large head garlic
- ½ teaspoons salt
- 1 teaspoon Worcestershire sauce
- 1 teaspoon Dijon mustard
- 2 tablespoons unsalted butter, softened
- 1 teaspoon extra virgin olive oil
- Take the skin off the garlic bulb and cut ½ inch off the top so the cloves are exposed. Put the garlic head on a square of aluminum foil and drizzle the olive oil over it. Fold up the foil and seal it, leaving it loose so steam can escape. Grill over an indirect medium heat for about 40 minutes until the cloves are soft.
- Remove the garlic from the grill and let it cool.
- Squeeze the contents of the garlic cloves into a bowl and mash with a fork, adding the salt, Worcestershire sauce, Dijon mustard, butter, and olive oil.
- Mix well and refrigerate. Season the steaks on both sides and press the spices into the meat. Let the steaks stand at room temperature for 30 minutes.
- Brush the oil on both sides of the steaks and grill them directly over the coals until they are 145 degrees F inside for medium rare or 160 degrees F for medium.
- This will take between three and five minutes per side and you should turn the steaks once during the grilling time.
- Remove the steaks from the grill and let them rest for 5 minutes. Divide the roasted garlic butter between the steaks and serve with grilled vegetable kabobs or a crisp salad.

Tips on How to Cook a New York Strip Steak
New York strip steak is one of the most flavorful cuts of steak, which is why it is so popular. However, nothing is so annoying as buying a great cut of steak and ruining it! Undercooked steak can usually be salvaged but what about overcooked steak? What if you burn the outside and the inside is still raw?
Cooking New York Strip Like a Pro
Here are some great tips to ensure that the wonderful New York strip steak you found on your recipe search comes out perfectly.
First of all, make sure you have a good piece of steak. The fresher the New York strip steak is, the nicer it will taste. Add some salt and pepper and perhaps some garlic. Remember that you are using a naturally flavorsome cut of meat so don’t over season it.
A good tip for cooking steak is to leave it at room temperature for half an hour or an hour to let the seasonings soak in. This will make the steak more tender as well as tastier.
Alternatively you can follow a steak marinade recipe but because New York strip steak is naturally flavorful do not use a marinade that needs to be left on for more than an hour or so because you can ruin a good steak this way. Marinades that need to be left on for many hours or overnight are geared towards tough cuts of steak which need to be tenderized, not succulent cuts like New York strip steak.
How to Cook a Steak on a Gas Grill
Forget about baking your steak. The best way to cook New York strip steak is to grill it. A gas grill is fine for cooking steak. Set the grill to high and close the lid to let it get really hot.
The best way to eat a New York strip steak is medium rare. Rare is fine too but once you go beyond medium rare, it will get tough. The steak only needs three or four minutes per side to cook. You should flip it just once. If you want to make a nice grill pattern on your meat, turn it over carefully rather than flipping it.
Learning how to cook a steak on a gas grill is very easy but keep an eye on it because if you accidentally overcook your steak there is not a lot you can do to redeem it!
How Long to Cook a Steak
The best way to tell if your steak is done is to make a fist, tucking your thumb inside. If you squeeze tightly, the muscle at the base of your thumb will be hard. This is what a well done steak feels like. Let your hand go limp and press the muscle again. This is what a rare steak feels like. A middle tension is medium. You can use a meat thermometer if it is easier for you. 160 degrees F is medium.
A thick steak will take longer to cook than a thin one, so it is best to either use the fist technique as described above or use a thermometer. Knowing how long to cook a steak becomes easier as you get more practice.
