We are almost done with the switch over of our blogs and had hoped to of had 3 major sites done January we managed to get 2 of them and are close to finishing of the 3rd FunCupcakeIdeas has taken a little longer then hoped. We had to give our Squidoo lens some attention which has taken our head writers help so this is why the delay. The good thing is when we are done our Squidoo lenses will deliver even more value to you and us.

February means it is time to think of the ones we love and I would like to dedicate this issue to romance and my loved ones and bring you a Valentine’s Day special.

We have added to our first Tumblr blog (http://chicken-marinade-recipe.tumblr.com/) and plan to launch blog number two for our pizza lovers out there and one for appetizer recipes as well we hope to launch another one for our Mexican food site shortly we are in the process of working up content as we speak. We try to use these to bring you up to date food info and update them regularly.

On the social seen we just past the 18 thousandth fan on Facebook and hope to make huge gains this year as we find this is the best way to give you up to the minute info of new content whether on our sites or one of our Squidoo lenses or HubPages Hubs, plus the tumblr accounts. Our most social site continues to be our flagship MexicanFoodRecipes.org your bookmarks have helped more people discover this wonderful cuisine and site, we appreciate your support.

Cute Valentine Dessert Recipe

Ingredients

  • 5 cups self-rising flour
  • 2 teaspoons vanilla extract
  • 2 cups white sugar
  • 5 lightly beaten eggs
  • 13 oz cooled, melted butter
  • 2 cups milk
  • For the Frosting:
  • 1½ teaspoons vanilla extract
  • 1½ sticks unsalted butter, at room temperature
  • 1½ pounds powdered sugar
  • 4½ tablespoons milk
  • Red or pink food coloring, as needed
  • 40 red heart-shaped jellies or candies, to decorate

Instructions

  1. Preheat the oven to 375 degrees F and line a pair of 12 hole muffin pans with paper cases.
  2. Stir the flour and sugar together in a bowl and make a well in the center.
  3. Beat the milk with the egg, butter, and vanilla in a jug, and then pour this into the well.
  4. Stir to combine, using a metal spoon.
  5. Fill the paper cases 2/3 full with this batter and bake for 12 to 15 minutes, swapping the trays halfway through.
  6. The cupcakes are done when a toothpick inserted into the center comes out clean.
  7. Cool the cupcakes on a wire rack.
  8. Repeat with the remaining mixture to make a total of 40 cupcakes, filling any empty muffin cups with water, to promote even baking.
  9. To make the frosting, cream the butter using an electric mixer.
  10. Add the milk, vanilla and powdered sugar, and mix for a couple of minutes at low speed.
  11. Add a couple of drops of food coloring and use a spatula to blend it in.
  12. Add more if necessary.
  13. Spread the frosting over the cooled cupcakes, using a palette knife.
  14. Decorate each one with a heart-shaped candy and store in an airtight container.
