Mexican Corn Cake with Strawberries

Ingredients

  • ¾ cup all-purpose flour
  • ¾ cup cornbread bread mix
  • 1 egg
  • ½ cup buttermilk
  • ¼ teaspoon salt
  • ½ teaspoon baking soda
  • ¾ cup white sugar
  • ⅓ cup plus 1 tablespoon melted butter
  • 1 teaspoon vanilla extract
  • 8 sliced strawberries

For the Topping:

  • ¼ cup brown sugar
  • 1 ½ tablespoons all-purpose flour
  • 1 tablespoon chilled butter
  • Maple syrup, whipped cream and whole strawberries, to serve

Instructions

  1. Preheat the oven to 375 degrees F.
  2. Whisk the flour, cornbread mix, salt, baking soda, and sugar together.
  3. Combine the egg, ⅓ cup butter, buttermilk, and vanilla using an electric mixture for a minute or 2.
  4. Turn the mixer to low and add the flour mixture, then mix until smooth.
  5. Melt 1 tablespoon of butter in a 9 inch iron skillet over a medium heat and ensure it coats the pan evenly.
  6. Pour in the batter.
  7. Combine the flour with the brown sugar to make the topping, and cut in the butter until you get a breadcrumb texture.

  • 2 tablespoons canola oil
  • 1 red bell pepper, in strips

Boil until the tomatoes are thoroughly cooked, blend, and return the sauce to the fire to continue cooking. Add salt, pepper, a dash of cumin and chili powder, parsley or cilantro, and a cube or two of chicken bouillon.
